A favourite on the cupping table, this coffee is sweet, fruity and hails from Mantiqueira de Minas, a specialty coffee producing micro-region renowned for its incredible floral and citrus cup profiles.
Originating from the native Tupi word "amantikir", Mantiqueira means "where the mountains cry". This micro region borders Sao Paolo and Rio De Janeiro states, and includes more than 7,000 coffee growers collectively who produce up to one million bags annually.
Cherry is selectively handpicked at Fazenda Santa Terezinha and delivered to the farm's processing centre, where it is pulped. Then, parchment and remaining mucilage is laid to dry in a parabolic dryer and turned frequently to ensure even drying.
