Coffee has always been a part of Gilmar Rezende's life. His father, also a coffee producer, planted many coffee trees in the 10 hectares of land that now surrounds Gilmar's estate, Sítio Pinheiros.
Gilmar has been managing the estate for 28 years, selling his coffee as specialty grade for the past six. Due to mountainous topography, harvesting is done manually and selectively, as the climate conditions result in a less uniform maturation. Post harvest, the coffee is divided between natural and pulped natural processing, and dried in traditional concrete patios. They also use a rotating artificial dryer knows in Brazil as a 'Guardiola'.
Sítio Pinheiros is located in Matas de Minas, a region of Brazil's largest coffee-growing estate, Minas Gerais, which accounts for nearly 50% of the country's production. Matas de Minas has an undulating landscape, characterised by a warm, humid climate. It's known for its increasing production of specialty coffee, which is typically sweet with citric, caramel or chocolate notes.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
