Renardo Ovalle is a third generation coffee producer in the Huehuetenango region of northern Guatemala. He owns the La Bolsa farm, founded by his grandfather Jorge Vides. A doctor by profession, Jorge Vides bequeathed a humanist philosophy that still influences the farm's development and the Ovalle family today.
Renardo's passion for coffee production is shared by his employees, and this is felt all the way through to the cup. Today, the Ovalle family is one of the most recognised Guatemalan families in specialty coffee - a reputation that is aided by the fact that their coffees have won numerous Cup of Excellence Awards.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
