A little while back, we cupped a selection of delicious coffees provided to us by Sucafina Specialty, and this coffee from Timor-Leste was the standout on the table. Whilst we’ve showcased Southeast Asian coffees before, this is the first time a Timor-Leste specific coffee has made its way onto our menu!

Single Origin Filter Coffee Description

Produced by the 37 farmers that make up the Daurfusu Group, this high quality coffee is the result of a focus on picking only ripe cherry and processing it with immense care. The Daurfusu Group is composed of various small lots, each processed separately on the producers' own farms.

Each family selectively handpicks their own cherry and uses a traditional, locally-produced pulper made from gum-wood hammered tin to pulp the cherry. Then they ferment the parchment in buckets or bags for about 36 hours. Parchment is dried on tarps and is raked frequently to ensure even drying.

Today, coffee is the second most valuable export in Timor-Leste and is exceeded only by oil. A full third of the country's population depends on coffee as their primary source of income. The combination of high altitude, rich soil and superb climate when paired with a focus on increasing farmer know-how and improving infrastructure, has - and will continue to - produce incredible coffees.

Coffee Breakdown

Fully washed - Typica varietal grown and hand picked at an altitude of 1400-1600 masl in the region of Ermera, transferred and pulped at the Lutlala Washing Station for processing, Lutlala Dukurai, Timor-Leste.

We’ve created our filter recipes as a guide to help you achieve the same great flavours we experience in our coffees. If you are unable to reproduce the exact result on your manual brewing gear, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
