Single Origin Espresso Coffee Description

This coffee comes from Edson Luiz Ignacio’s 1,000-hectare farm in Tapira, Serra da Canastra—a subregion of Cerrado Mineiro known for its fertile soil, native biodiversity, and altitudes reaching 1,500 MASL. The unique terroir—shaped by hot, humid summers, dry winters, and significant diurnal temperature swings—supports slow ripening and the development of flavour-rich, high-density beans.

We first connected with Edson at MICE 2025, where his passion and progressive approach to coffee farming made a lasting impression. A young and innovative producer, Edson is constantly improving quality through experimentation and investment in infrastructure. Recent additions include a drying yard, mechanical dryers, and pre-harvest plot mapping—steps that help him consistently produce traceable, high-quality lots.

Half the farm is preserved native vegetation, supporting rich Cerrado fauna like maned wolves and giant anteaters, and helping regulate the local ecosystem. Sustainable practices—like organic composting, biological pest control, and water conservation—are deeply embedded in daily operations.

This lot was processed using a carefully managed aerobic natural method, resulting in a fruit-forward, well-structured coffee that captures the potential of modern Brazilian production.
