This coffee is an exceptional expression of innovation and heritage from Brazil’s famed Cerrado Mineiro. Produced by Gabriel Nunes, a rising star in the Brazilian specialty scene, this Aerobic Natural Arara is anything but typical. It’s rich, creamy and bold, with notes of berry compote, dark chocolate and roasted almond—a cup that pushes the boundaries of what Brazilian coffee can be.

Single Origin Coffee Description

At the heart of this coffee is a generational legacy rooted in quality, sustainability and forward-thinking. The story begins in 1984, when Osmar Junior planted the family’s first Arabica coffee trees at Fazenda Chapadão. Inspired by Brazil’s growing specialty coffee movement, he transformed the family cattle farm into a thriving coffee estate. Today, his son Gabriel Nunes—an agronomist trained at the renowned University of Viçosa—leads Nunes Coffee with a strong commitment to innovation, traceability and excellence.

Gabriel brings a fresh perspective to coffee farming, blending modern agronomic knowledge with a deep respect for tradition. His approach has earned Nunes Coffee accolades on the national and international stage, including a Cup of Excellence award in 2015. Working in partnership with Southland Merchants, we’re excited to support his vision and showcase the exciting results.

This lot is 100% Arara—a hybrid varietal favoured for its disease resistance, drought tolerance and outstanding flavour. The bright yellow cherries are handpicked at peak ripeness and processed using the Aerobic Natural method, which allows the coffee to ferment in open air before drying. The result is a cup with a creamy, coating mouthfeel and layered flavours that are at once fruity, nutty and chocolatey.

Cerrado Mineiro—Brazil’s first coffee-producing region to receive Protected Geographical Indication (PGI) status—offers the perfect conditions for quality production: a predictable climate, rich soil, and careful farm management. All Nunes Coffee lots are PGI-certified, guaranteeing both origin and quality.

This recipe is for espresso and developed on a commercial coffee machine. Use it as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your setup.
