Selected by our Melbourne roastery team during Luiz Saldanha’s visit to Australia, this coffee stood out on the table for its delicate structure and creamy body, delivering flavours of cinnamon, apple, marzipan and biscuit. Produced primarily by Flavia Saldanha, this small lot showcases both innovative processing and the deep commitment to quality that defines the Saldanha family.

Nestled in Brazil’s southernmost coffee-growing region, Fazenda California sits in the subtropical climate of Norte Pioneiro do Paraná. Here, volcanic soils, high elevation and a distinct seasonal cycle create ideal conditions for growing expressive, high-quality Arabica.
Luiz and Flavia Saldanha, both trained agronomists and licensed Q-Graders, have transformed their family farm into a model of sustainable, quality-focused coffee production. Under their stewardship, every aspect of harvesting, milling, and processing has been refined — and it shows in the cup.
The Arara varietal featured in this lot is a cross between Obatã and Catuaí Amarelo. Known for its disease resistance, productivity and standout flavour, Arara is quickly becoming a favourite among Brazilian producers.
What makes this coffee especially unique is its Double Washed processing. After careful picking, cherries are sorted and pulped before undergoing a two-stage fermentation: first, 48 hours in an anaerobic container, then another 48 hours submerged in water. Temperature and pH are monitored throughout to ensure a clean and controlled fermentation. The coffee is then dried in parchment on parabolic patios.
This meticulous method enhances the cup’s clarity and sweetness, bringing out the creamy mouthfeel and nuanced flavour notes we love.
