Single Origin Filter Coffee Description

Luz Helena Salazar’s coffee is a great representation of ambition and expertise. Inspired by her husband Jairo Arcila's extensive experience in coffee farming and management, Luz Helena embarked on her own coffee journey. Her 8-hectare farm, Finca Maracay, sits at an elevation of 1450 meters above sea level, blessed with rich volcanic ash soil, perfect for growing the best coffee cherries.

For over 20 years, Luz has been honing her skills, driven by a desire to be deeply involved in the coffee industry. With guidance from her husband, and support from Cofinet, our Colombian coffee partner run by her sons Carlos and Felipe, Luz has continuously refined her farm practices with the focus being on producing the highest quality cherries.

This microlot, a 100% Caturra variety, undergoes meticulous hand harvesting, adhering to strict ripeness standards. The cherries are then floated and hand-sorted to remove defects, followed by a unique 30-hour underwater fermentation process. Post-fermentation, the cherries are gently washed and dried under controlled conditions, ensuring the ideal moisture content is achieved.

The coffee is beautifully balanced, juicy and clean. It has tasting notes of cherry, rhubarb and currant, with a crisp apple acidity that sparkles on the tongue. For the second year running, we’re so proud to feature Luz Helena’s coffee, and hope you enjoy it as much as we do.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
