Single Origin Filter Coffee Description

The Idido Cooperative, established in the late 1970s and later integrated into the Yirgacheffe Farmers Cooperative in 2002, is a collaboration between farmers from eight neighbouring villages. With over 1,000 members, the cooperative focuses on producing unique lots that reflect the individual characteristics of each community. The coffee cherries, handpicked from small farms averaging less than one hectare, are cultivated alongside other crops, showcasing the diversified agriculture of the region.

The terroir of Idido, characterised by red-brown clay soil, plays a crucial role in shaping the flavour profile of this coffee. The naturally processed beans are carefully sorted, washed, and laid out on elevated drying beds, where they are turned regularly for even drying, a process taking anywhere from 8 to 25 days, depending on the weather.

Yirgacheffe, known for its lush vegetation and balanced tropical climate, produces coffee with distinctly fruity flavours. Small-scale farmers here typically engage naturally in organic farming methods, growing coffee under the shade at elevations ranging from 1600 to 2400 metres. The diversity of microclimates in Yirgacheffe leads to a wide range of complex flavours, varying significantly based on the specific processing methods of each washing station.

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
