3 CUP CHEMEX GUIDE

YOU WILL NEED
PREPARATION

Place the folded filter into the Chemex with the thick (3 layer) side facing the spout. Rinse thoroughly with hot water to rid of any papery residue; this will also preheat the brewer. If you’re using a fabric filter, it’s still good practice to rinse the filter.
Empty this water out when Chemex is hot and add coffee to the filter. Place on scales and tare to zero.

Using your pouring kettle, add 60ml of hot water to saturate your grinds and start your timer. Agitate the coffee bed by lightly digging with your stirrer for around ten seconds, then let the coffee ‘bloom’ for 30 seconds more, or until coffee smells sweet.

Working from the edge toward the centre, pour in the remaining water (approx. 240mL) in slow circular motions. When all water has been added, stir the coffee grinds. This will help produce an even extraction.

When water is halfway down your filter, give the Chemex a few small swirls so your coffee bed becomes conical, this will help your brew to be better balanced in flavour.

Your brew should finish in around 3 minutes.

TIPS

If your extraction is too slow your grind may be too fine - try coarsening it up! If your brew For a stronger brew, try adding 5g more of coffee. Full bodied coffees can be ground coarser than usual for a bolder, sweeter brew.
