We’re excited to welcome this delicious coffee from producer, Diofanor Ruiz. Diofanor’s washed Colombian coffee is a real highlight – reliable, vibrant, and layered with sweetness. This season’s lot stood out for its round, juicy mouthfeel and a flavour profile that balances crisp fruit notes with rich sweetness. With notes of pear and apple, rounded out with maple syrup and a hint of coconut – it’s a beautiful coffee from Finca La Divisa.

Finca La Divisa is a 14-hectare farm in Buenavista, Quindío, sitting at 1,950 MASL and run by second-generation coffee farmer, Diofanor Ruiz. Since purchasing the farm in 2005, Diofanor has focused on quality-driven cultivation and processing, moving away from traditional, volume-based production.
The farm uses integrated agroforestry practices, with shade-providing and soil-enriching trees like Guamo, Guayacán, and Tigua, alongside fruit trees including bananas, guava, mandarins, and oranges. These practices improve biodiversity and build resilience, supporting the long-term sustainability of the farm.
Diofanor’s journey into specialty coffee began in 2005 when he tasted his own coffee for the first time, inspiring a shift towards quality and innovation. In 2017, he began working with our partners at Cofinet, adopting advanced processing techniques to elevate cup quality even further. Today, Diofanor works alongside his son Sebastián, who is studying agroforestry engineering to continue the farm’s legacy.
This microlot of 100% Castillo is carefully harvested at peak ripeness, floated and hand-sorted before undergoing a 30-hour underwater fermentation. After pulping, the parchment is washed and dried under temperature-controlled conditions to ensure a clean, consistent profile. Castillo is a varietal developed by the Federación Nacional de Cafeteros, known for its leaf rust resistance and productivity, while still delivering exceptional results with meticulous processing – as this coffee demonstrates beautifully.
