Ethiopia, Kayon Mountain - Single Origin Espresso

We’re pleased to introduce this incredible coffee from the Guji region of Ethiopia to our menu. Our producer, Ismael Hassen Aredo, has cultivated a delicious, washed coffee very characteristic of its origin. It's a rare treat for us to showcase a single-farm coffee from Ethiopia, and we’re delighted to share Ismael’s coffee with you.

Single Origin Coffee Description

Our coffee originates from the Kayon Mountain Coffee Farm, spanning 500 hectares that’s predominantly planted with coffee trees. Ismael and his family have proudly owned this farm since 2012, nestled in the southern reaches of Ethiopia within the Guji region. This area is celebrated for its coffee production due to its very high altitudes, the rich red soil and the unique microclimate.

Ismael oversees 25 permanent full-time staff and 300 seasonal employees during harvest periods. Employees are offered free transportation services to and from the farm each day, as well as financial support for constructing schools and administration buildings for the local villages. In order to attract seasonal workers, the farm ensures that they’re offering an attractive wage to incentivise their staff to return year after year.

The farm utilises shade from acacia and other indigenous trees to cultivate and protect their coffee trees, as well as creating compost to fertilise their crop naturally. Ismael and the Kayon Mountain team are meticulous about their harvesting and processing methods, ensuring that every bean meets its potential.

  • RATIO - 1:1.7

This recipe is for espresso and developed on a commercial coffee machine. Use as a guide to achieve your desired flavour preference. If you are unable to reproduce the exact result on your home machine, don’t panic, an alternative is to simply adjust your recipe using the ratio so it works best for your set up.
