"We wanted to design a blend that balanced the overwhelming sweetness that you get with larger amounts of milk," Boris explains. This goal was central to the blend's development, especially for coffee drinkers who enjoy milk-based beverages. To achieve this, the team aimed for a slightly heavier cut-through that could complement the creamy texture of milk. “We went for a slightly heavier cut-through, and we think we’ve achieved it,” says Boris.
Troublemaker brings together the distinct qualities of Brazil, Ethiopia, and Papua New Guinea. “We’re featuring an anaerobic natural Brazil Bela Vista that we purchase every year. We’re combining that with a Grade 2 washed Ethiopian coffee from Yirgacheffe called Dumerso, and a coffee from Papua New Guinea called Simbu,” Boris explains.
Each origin contributes to Troublemaker’s complex and intriguing flavour profile. The Brazilian beans offer bold notes of dark chocolate, the Ethiopian beans introduce fruity raisin and bright acidity, and the Papua New Guinea beans provide rich toffee sweetness that rounds out the blend. This combination ensures that Troublemaker delivers a rich, full-bodied experience that stands up to milk and offers an exciting, well-balanced cup.
When asked about his favourite way to brew Troublemaker, Boris says, “I love a double shot flat white with full cream milk.” However, he adds that Troublemaker works well across a variety of beverages and even suggests trying it in a coffee cocktail.
