This 200hr anaerobic natural from Santa Monica is a bold and layered filter coffee that immediately stood out on the cupping table for its depth, sweetness and structure. Expect a profile reminiscent of Black Forest cake, with blueberry, plum, dark chocolate and black tea wrapped in a creamy, full-bodied cup.

Colombia, Jairo Arcila - Single Origin Filter

Jairo Arcila is a third-generation coffee producer from Quindío, Colombia, whose coffees we’ve proudly featured at Padre for many years. Before focusing on his own farms, Jairo spent more than four decades managing dry mills for one of Colombia’s largest exporters, building the technical foundation that now shapes his meticulous approach to processing.

This lot comes from Santa Monica, one of six farms now managed by the Arcila family. The coffee was processed at La Pradera, the experimental processing facility established by Jairo’s sons, Felipe and Carlos Arcila, through Cofinet — a producer network focused on direct trade and quality-driven processing. 

The variety is Castillo, a Colombian cultivar known for balancing resilience with strong cup quality. At 1500 MASL in Quindío’s volcanic soils, the variety develops impressive sweetness and structure, particularly when paired with extended fermentation methods like this one. 

Processing begins with carefully selected ripe cherries that first undergo 24 hours of aerobic fermentation before moving into sealed GrainPro bags for a controlled 200-hour anaerobic fermentation. Temperature is carefully managed throughout to build complexity without overwhelming the cup. The cherries are then dried slowly on raised beds for 8–12 days.

The result is a natural coffee that feels composed rather than overpowering. Dense fruit notes lean toward blueberry compote and ripe plum, while dark chocolate sweetness and a lingering black tea finish bring balance and clarity. It’s an expressive and highly drinkable coffee that showcases both the ambition of Colombian processing and the consistency of Jairo’s work.
